Ingredients

For the best results, make sure all ingredients are at room temperature (especially the eggs).

  • 500 g flour (high quality, white)
  • 7 g yeast (dry)
  • 250 ml warm milk (not hot!)
  • 2 eggs + 1 yolk
  • 50 g melted butter
  • 30–40 g sugar (adjust based on your preference)
  • A pinch of salt
  • Untreated lemon zest
  • Vanilla (extract or vanilla sugar)
  • Sunflower oil for frying
  • Powdered sugar for decoration

👨‍🍳 Preparation:

  1. Preparing the ingredients: Start by taking the eggs out of the fridge in advance. If you're in a hurry, a quick trick is to leave them in warm water for 20 minutes to reach the optimal temperature.
  2. Forming the dough: In a large bowl, sift the flour. Add the eggs, and the warm milk previously mixed with the yeast. Add the sugar, pinch of salt, lemon zest, and vanilla. Start kneading the composition. Once the ingredients are incorporated, pour in the melted butter and continue kneading for 6–7 minutes. Note: The dough will be slightly sticky, but it's perfect that way!
  3. First rising: Place the dough in a bowl greased with a little oil, cover it well, and let it rise in a warm place, away from drafts, for about 2 hours.
  4. Shaping the donuts: After it has risen nicely, turn the dough out onto the work surface. Divide it into 8–10 pieces. Roll each piece into a long log, cut the log in half, and twist the two strips into a spiral shape.
  5. Second rising: Place the shaped donuts on a work surface, cover them, and let them rest for another 30–40 minutes. This step is essential for them to become extremely fluffy.
  6. Frying: Heat the oil in a large pan over low heat. Fry the donuts one by one, for about 6–7 minutes on each side, turning them until they are golden and evenly browned.
  7. Serving: Remove them onto paper towels to absorb excess oil, dust them generously with powdered sugar and... done!
